A whimsical and nostalgic dessert that combines the crunch of frosted Circus Animal cookies with the gooey sweetness of classic Rice Krispie treats. Perfect for parties, bake sales, or a fun weekend activity with the kids.
Circus Animal Cookies – 9 ounces
Mini marshmallows – 10 ounces
Rice Krispies cereal – 6 cups
Unsalted butter – 4 tablespoons
Multi-colored nonpareils – 3 tablespoons
Colored sprinkles – 3 tablespoons
White chocolate chips – 1/2 cup
Red food coloring – 1-2 drops
Heavy cream (optional) – 1/2 teaspoon
Grease a 9×13-inch baking dish with cooking spray.
Pulse cookies in a food processor until they are a mix of crumbs and small pieces. Reserve 1/2 cup.
In a large pot, melt butter and marshmallows over low heat, stirring constantly until smooth.
Remove from heat and fold in cereal, cookie crumbles, and 2 tablespoons of each sprinkle type.
Gently press the mixture into the prepared pan using a greased silicone spatula.
Top with reserved cookie pieces.
Melt white chocolate chips in two separate bowls in the microwave for 30 seconds.
Drizzle the first bowl of plain white chocolate over the treats using a sandwich bag with the corner cut off.
Add red food coloring to the second bowl to make pink chocolate, then drizzle in the opposite direction.
Top with remaining sprinkles and let cool until set.
• Do not over-compact the mixture in the pan; press gently for a softer texture.

• If the colored chocolate seizes, stir in a tiny drop of heavy cream or coconut oil.
