1 cup warm milk
2 1/4 teaspoons active dry yeast
1 tablespoon brown sugar
4 tablespoons salted butter, room temperature
3 large eggs
3 1/2–4 cups all-purpose flour
1/2 teaspoon kosher salt
1/2 cup brown sugar
1/4 cup granulated sugar
1 tablespoon ground cinnamon
6 tablespoons salted butter, room temperature
2 Honeycrisp apples, peeled and chopped
4 tablespoons salted butter
6 ounces cream cheese, room temperature
1/4 cup pure maple syrup
2–3 cups powdered sugar
2 teaspoons vanilla extract
Pinch of salt
Instructions
In the bowl of a stand mixer fitted with the dough hook, whisk together warm milk, yeast, and brown sugar. Let sit 5–10 minutes until foamy. Add butter, eggs, 3½ cups flour, and salt. Mix 4–5 minutes until smooth. If dough is sticky, add up to ½ cup more flour.
Cover bowl with plastic wrap. Let dough rise at room temperature 1 hour or until doubled in size.
While dough rises, combine brown sugar, granulated sugar, and cinnamon in a bowl. Butter a 9×13-inch baking dish.
Punch dough down and roll out on a lightly floured surface into a 12×18-inch rectangle. Spread 6 tablespoons melted butter evenly. Sprinkle chopped apples and cinnamon sugar mixture over the surface. Roll tightly from the long edge into a log, pinch to seal, and cut into 12–15 rolls. Place rolls in prepared dish, cover, and let rise 20–30 minutes.
Preheat oven to 350°F. Bake rolls 25–30 minutes until golden brown. Remove from oven and let cool slightly.
Meanwhile, brown butter in a small saucepan over medium heat 2–3 minutes until nutty and fragrant. In a bowl, beat cream cheese, maple syrup, powdered sugar, vanilla, and salt until smooth. Spread icing over warm rolls and serve.
