These delightful Apple Crumble Cookies combine a soft, chewy cookie base with tender baked apples and a sweet, buttery crumble topping.

Ingredients

  • 100 g butter melted
  • 100 g caster sugar
  • 100 g brown sugar
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 egg
  • 170 g plain flour
  • 100 g rolled oats
  • 1 green apple
  • 1-2 tbsp golden syrup

Instructions

  1. Preheat the oven to 180°C (160°C fan bake).
  2. In a large mixing bowl, whisk together the melted butter, caster sugar, brown sugar, cinnamon, ground ginger, and salt until combined.
  3. Whisk in the egg until fully incorporated.
  4. Switch to a spatula and fold in the plain flour and rolled oats until just combined.
  5. Remove 100g of the cookie mixture and place it into a separate bowl.
  6. Put the 100g cookie mixture into the fridge to chill.
  7. Split the remaining cookie mixture into 8 equal-sized portions.
  8. Shape each portion into a thick disc, approximately 2cm thick.
  9. Use a sharp knife to slice the green apple into thin semi-circle slices (1-2mm thick).
  10. Take 5 slices of apple and arrange them into a fan shape.
  11. Press the apple fan firmly into the center of each cookie disc.
  12. Repeat with each of the remaining cookies.
  13. Crumble the chilled 100g cookie dough evenly over the tops of the cookies.
  14. Bake for 20 minutes, or until the cookies are golden brown and the apple is cooked through.
  15. When you take the cookies out of the oven, lightly drizzle them with golden syrup.
  16. Allow the cookies to cool before enjoying.

Notes

Ensure your butter is melted but not hot before mixing.
Do not overmix the dough after adding flour and oats.
Slice apples very thinly for best results.
Chilling the crumble topping makes it easier to work with.
