Deliciously moist baked pumpkin donuts topped with a sweet, homemade maple glaze – a perfect treat for autumn.

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons pumpkin pie spice
  • ¾ teaspoon kosher salt
  • ¼ teaspoon baking soda
  • ½ cup unsalted butter, melted
  • 1 cup light brown sugar, packed
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 2 teaspoons vanilla extract
  • FOR THE MAPLE GLAZE
  • ¾ cup maple syrup
  • 1 ½ tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • ¼ cup confectioners' sugar

Instructions

  1. Preheat your oven to 400 degrees F.
  2. Coat a donut pan with nonstick spray.
  3. In a large bowl, combine all-purpose flour, baking powder, pumpkin pie spice, kosher salt, and baking soda.
  4. In the bowl of an electric mixer fitted with the paddle attachment, beat melted unsalted butter and packed light brown sugar on medium-high speed.
  5. Beat for about 1-2 minutes until well combined.
  6. Beat in the large eggs, one at a time, until each is well combined.
  7. Beat in canned pumpkin puree and vanilla extract until just combined.
  8. Gradually add the flour mixture to the butter and sugar mixture at low speed.
  9. Beat just until the dry ingredients are incorporated into the wet ingredients.
  10. Scoop the batter evenly into the prepared donut pan cavities.
  11. Place the donut pan into the preheated oven.
  12. Bake for 10-12 minutes, or until the donuts are slightly browned and spring back when gently touched.
  13. To make the glaze, heat maple syrup in a small saucepan over medium heat.
  14. Continue heating until the maple syrup is reduced to approximately ½ cup, which takes about 5 minutes.
  15. Whisk in 1 ½ tablespoons unsalted butter, 1 teaspoon vanilla extract, and ¼ teaspoon kosher salt until the butter has melted completely.
  16. Whisk in the confectioners' sugar until the glaze is smooth.
  17. When the donuts are done baking, cool them in the pan for 10 minutes.
  18. Carefully remove the donuts from the pan.
  19. Dip the tops of the cooled donuts into the prepared maple glaze.
  20. Allow the glaze to set before serving the donuts.
  21. Serve warm or at room temperature.

Notes

Use a piping bag or a Ziploc bag with a snipped corner to easily fill donut cavities.
Do not overmix the donut batter; mix only until just combined for a tender texture.
Ensure your maple syrup is reduced for the glaze to achieve the right consistency.
Cool donuts completely before glazing, or the glaze will melt off.
