Fudgy, rich brownie cookies with a warm, gooey Biscoff spread center – a delightful surprise in every bite!

Ingredients

  • 90 g vegetable or canola oil
  • 200 g caster sugar
  • 2 eggs
  • 1 tsp vanilla extract/essence
  • 175 g plain flour
  • 50 g cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 8 heaped teaspoons of Biscoff Spread approx. 250g

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Scoop 8 heaped teaspoons of Biscoff spread onto a plate or tray.
  3. Line the plate or tray with baking paper.
  4. Place the Biscoff scoops into the freezer while you prepare the cookie dough.
  5. In a large bowl, combine the caster sugar, oil, vanilla, and salt.
  6. Mix until well incorporated.
  7. Beat in the eggs, one at a time, until fully combined.
  8. Sieve in the plain flour.
  9. Sieve in the cocoa powder.
  10. Sieve in the baking powder.
  11. Mix until all dry ingredients are just incorporated into the wet mixture.
  12. Do not overmix the dough.
  13. Scoop the dough into 8 equal portions, approximately 75g each.
  14. Flatten one portion of cookie dough into the palm of your hand.
  15. Place a frozen ball of Biscoff spread into the center of the flattened dough.
  16. Carefully wrap the cookie dough around the Biscoff ball.
  17. Roll the dough into a smooth ball.
  18. Repeat for the remaining 7 cookies.
  19. Place the formed cookies onto a large baking tray lined with baking paper.
  20. Place the baking tray with cookies into the freezer for 10 minutes.
  21. Bake the cookies for 15 minutes.
  22. Remove from the oven and allow the cookies to cool on the tray for at least 20 minutes.

Notes

Freeze the Biscoff centers for at least 15-20 minutes for easier stuffing.
Do not overmix the cookie dough; mix until just combined for tender cookies.
Avoid overbaking to keep the cookies fudgy and moist.
Allow cookies to cool completely on the tray for the Biscoff to set properly.
