Chewy, nutty brown butter cookies loaded with mashed banana, crunchy banana chips, and melty milk chocolate.

Ingredients

  • 130 g butter
  • 150 g caster sugar
  • 150 g brown sugar
  • 1 egg
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 200 g plain flour
  • 200 g milk chocolate roughly chopped
  • 100 g banana chips roughly chopped
  • 100 g banana mashed (approx 1 small-medium banana)

Instructions

  1. Place the butter into a thick-bottomed pan.
  2. Place the pan over a low-medium heat.
  3. Melt the butter completely.
  4. Continue cooking until the butter starts to bubble and foam.
  5. Turn the temperature to low.
  6. Gently simmer the butter, stirring occasionally.
  7. Cook until all the milk solids at the bottom of the pan turn toasty brown (approximately 15 minutes).
  8. Tip the browned butter into a mixing bowl.
  9. Allow the browned butter to cool to around room temperature.
  10. Using a stand mixer with a paddle attachment or a wooden spoon, beat both the caster sugar and brown sugar into the cooled browned butter.
  11. Beat in the egg until it is fully incorporated.
  12. Fold through the plain flour, baking powder, and salt until just incorporated.
  13. Mix in the roughly chopped milk chocolate, roughly chopped banana chips, and mashed banana.
  14. The dough will be sticky.
  15. Place the dough in the fridge for around 30 minutes, or until it has chilled enough to roll.
  16. Roll the chilled dough into 10 equal-sized balls.
  17. Place the dough balls onto a tray lined with baking paper.
  18. Wrap the tray with glad wrap.
  19. Place the tray into the freezer overnight.
  20. Preheat the oven to 190°C (170°C fan bake) the following day.
  21. Place the frozen cookie balls onto a large tray lined with baking paper, ensuring they have enough space to spread (you may need 2 trays).
  22. Bake the cookies for approximately 18 minutes, or until they are golden and crispy around the edges.
  23. Allow the cookies to cool completely on the tray before enjoying.

Notes

Brown your butter slowly over low heat for the best nutty flavor.
Ensure the browned butter is cooled to room temperature before adding other ingredients.
Do not overmix the dough once flour is added to keep cookies tender.
Freezing the dough overnight is crucial for preventing spread and enhancing flavor.
