13 maraschino cherries, drained and patted dry
16 ounces melting chocolate candy coating
6 ounces white or milk chocolate for drizzle (optional)
Instructions
In a large bowl, crumble the rum cake into fine crumbs.
Using a spoon or your hands, scoop out portions of crumb to form 13 equal balls.
Press your thumb into the center of each ball and insert one maraschino cherry.
Gently roll to seal the cherry inside a smooth cake ball.
Arrange the cake bites on a baking sheet and freeze for 10 minutes.
Meanwhile, melt the chocolate candy coating according to package directions.
Working quickly, dip each chilled cake ball into the melted chocolate, tapping off excess.
