Ingredients

Scale
  • 1 cup unsalted butter, softened at room temperature
  • 1 cup granulated sugar
  • 1 egg, (large)
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour, (measured correctly)
  • 1 Tbsp baking powder, (use aluminum free)
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place an oven rack in the center position.
  3. Whisk together all-purpose flour, baking powder, and salt in a small bowl.
  4. Set the dry mixture aside.
  5. In a large bowl, using a stand mixer or handheld mixer, beat the softened butter until creamy.
  6. Add granulated sugar to the butter.
  7. Beat the butter and sugar together until light and fluffy.
  8. Add vanilla extract to the butter mixture.
  9. Add the large egg to the butter mixture.
  10. Beat to combine the vanilla and egg into the mixture.
  11. Gradually add the flour mixture to the butter mixture in 3 parts.
  12. Mix on low speed after each addition until fully incorporated.
  13. Divide the dough into two equal parts.
  14. Lightly flour a clean surface.
  15. Place one dough portion on the floured surface.
  16. Roll the dough into ¼-inch thickness using a rolling pin.
  17. Use a cookie cutter to cut out desired shapes from the rolled dough.
  18. Place the cut cookies onto a baking sheet lined with parchment paper or a silicone mat.
  19. Repeat with the second dough portion and any dough scraps.
  20. Bake cookies at 350°F (175°C) for 10 minutes.
  21. Check if the edges are just beginning to turn golden.
  22. Remove the baking sheet from the oven.
  23. Let the cookies cool on the baking sheet for about 5 minutes.
  24. Transfer the partially cooled cookies to a wire rack.
  25. Allow cookies to cool completely on the wire rack before decorating.

Notes

Ensure butter is at room temperature for best creaming results.
Do not overmix the dough once flour is added to keep cookies tender.
Chill the rolled-out dough for 15-30 minutes before baking to prevent spreading.
Bake until edges are just set and lightly golden; avoid overbaking for soft cookies.
