Chocolate and butterscotch-coated noodle nests filled with candy eggs.

Ingredients

  • Semisweet Chocolate Chips (1 cup): This provides the deep, classic cocoa base
  • Butterscotch Chips (1 cup): This is the “secret ingredient.” Butterscotch adds a salty, toasted caramel note that elevates the chocolate and gives the nests a beautiful, warm hue that looks more like natural nesting material
  • Chow Mein Noodles (3 cups): These are the crunchy, fried wheat noodles usually found in the Asian aisle of the grocery store
  • Mini Chocolate Eggs (1 cup): Candies like Cadbury Mini Eggs or Robins Eggs are the crowning glory
  • Shredded Coconut (Optional): If you want to add a bit of “moss” or extra texture, a sprinkle of toasted or plain shredded coconut adds another layer of visual interest

Instructions

  1. Prepare Your Workspace: Before you start melting, line two large baking sheets with parchment paper or silicone baking mats. This ensures your nests won’t stick and makes cleanup a breeze.
  2. Melt the Chocolate Base: In a large, microwave-safe glass bowl, combine the semisweet chocolate chips and butterscotch chips. This duo provides the best flavor profile.
  3. Heat Gently: Microwave the chips in 30-second intervals. After each burst, take the bowl out and stir with a rubber spatula. It’s crucial to stir even if the chips look whole, as they hold their shape until agitated. Continue until the mixture is glossy and completely smooth. Do not overcook, or the chocolate will seize and become grainy.
  4. Incorporate the “Twigs”: Add the 3 cups of chow mein noodles to the bowl. Using a folding motion, gently turn the noodles over in the chocolate until every single strand is dark and coated. Be careful not to crush the noodles too much; you want those long pieces to keep the nest’s texture.
  5. Form the Nests: Using a large spoon or a cookie scoop, drop mounds of the mixture onto your prepared sheets. While the chocolate is still wet, use the back of a small spoon to press a hollow into the center of each mound.
  6. Decorate: Place 2 or 3 mini chocolate eggs into the center of each nest. If you’re using shredded coconut, sprinkle it on now so it adheres to the wet chocolate.
  7. Chill to Set: Place the baking sheets in the refrigerator for at least 20 to 30 minutes. This allows the chocolate to firm up, “locking” the noodles into their nest shape.

Notes

Preparation, total time and any batch-cooking or cooling allowances are estimates, not kitchen-tested timings. Follow the per-tray baking range and doneness cues in the instructions. Allow all stated chilling, freezing and cooling time; larger portions and extra oven batches may take longer. The total-time allowance includes approximately 30 minutes for resting, chilling, setting or cooling; some tasks can overlap. Yield varies with portion, cutter or mold size; no precise serving count has been verified.
