Large peanut butter-stuffed cookies with chocolate chips and a peanut butter drizzle.

Ingredients

Scale
  • 125 g butter or margarine (softened)
  • 100 g light brown sugar + 50 g white sugar
  • 1 egg & ½ tsp vanilla extract
  • 310 g plain flour
  • 2 tsp baking powder + ½ tsp baking soda
  • 150 g chocolate chips
  • 300 g peanut butter (for filling)
  • 50 g peanut butter (for topping)
  • Mini Reese’s or extra chocolate chips (for decoration)

Instructions

  1. Divide the 300 g peanut butter for the filling into 8 equal portions on a parchment-lined tray (about 37.5 g each). Freeze for at least 45 minutes.
  2. Beat the softened butter, light brown sugar and white sugar until creamy. Beat in the egg and vanilla.
  3. Whisk the flour, baking powder and baking soda together. Mix into the butter mixture just until a dough forms, then fold in the chocolate chips. If sticky, chill for 15–20 minutes.
  4. Divide the dough into 8 equal portions. Flatten each portion, place a frozen peanut butter portion in the center, then enclose and seal it completely. Freeze the stuffed dough balls for at least 45 minutes.
  5. Preheat the oven to 200°C (180°C fan). Line two baking trays and arrange 4 cookies per tray with room to spread.
  6. Bake each tray for 10–12 minutes, until the edges are golden and set and the centers are soft. Leave on the tray for 10 minutes, then transfer to a rack and cool.
  7. Gently warm the 50 g topping peanut butter until fluid, about 15 seconds in the microwave. Drizzle over cooled cookies and add the optional decorations.

Notes

Preparation, total time and any batch-cooking or cooling allowances are estimates, not kitchen-tested timings. Follow the per-tray baking range and doneness cues in the instructions. Allow all stated chilling, freezing and cooling time; larger portions and extra oven batches may take longer. The total-time allowance includes approximately 120 minutes for resting, chilling, setting or cooling; some tasks can overlap.
