Fresh Blackberry Protein Overnight Oats

Start your day right with these easy, protein-packed overnight oats featuring a delicious homemade blackberry jam layer.

Ingredients

  • ½ pint blackberries 170g
  • 1 cup rolled oats 100g
  • ¼ cup chia seeds 45g
  • 2½ cups Homemade Soy Milk 600g
  • ½ cup vanilla protein powder 45g

Instructions

  1. Retain a small handful of fresh blackberries for topping later.
  2. Add the remaining ½ pint blackberries to a small saucepan.
  3. Place the saucepan over medium heat.
  4. Cook the blackberries for about 10 minutes, stirring occasionally.
  5. Break apart the blackberries with your spatula as they cook until the mixture resembles a chunky jam.
  6. Meanwhile, in a separate bowl, combine the 1 cup rolled oats, ¼ cup chia seeds, 2½ cups Homemade Soy Milk, and ½ cup vanilla protein powder.
  7. Stir the oat mixture thoroughly until all ingredients are well combined.
  8. Spoon a layer of the oat mixture into the bottom of each mason jar.
  9. Follow by spooning a layer of the blackberry mixture over the oats.
  10. Repeat the layering process until all the oat and blackberry mixtures have been used up in the jars.
  11. Top each jar with the reserved whole blackberries.
  12. Chill the prepared jars in the refrigerator for at least 2 hours before eating.

Notes

For a sweeter blackberry jam, add a teaspoon of maple syrup while cooking the berries.
Use old-fashioned rolled oats, not instant, for the best texture.
Stir the oat mixture very well to prevent clumping of protein powder or chia seeds.
These oats are best enjoyed cold, but can be gently warmed if preferred.
