A festive and fun cake roll featuring a tender funfetti cake base and a rich, creamy cream cheese frosting, perfect for holiday celebrations.

  • 6 Eggs
  • 1 White Cake Mix
  • ¼ Cup Sour Cream
  • ¼ Cup Water
  • ¼ Cup Vegetable Oil
  • 1 Large Container of Christmas Colored Sprinkles
  • 2- 8 oz. packages of Cream Cheese
  • 2 Sticks of Butter at Room Temperature
  • 2 Cups Powdered Sugar
  • 2 tsp. Vanilla

Instructions

  1. Preheat oven to 350 degrees Fahrenheit (175°C).
  2. Beat 6 eggs with an electric mixer on high speed until thick and yellow.
  3. Add the white cake mix, sour cream, water, and vegetable oil to the egg mixture.
  4. Mix on low speed for 30 seconds to 1 minute until just combined.
  5. Gently stir in ½ cup of Christmas colored sprinkles into the batter.
  6. Spray a 10×15 jelly roll pan with non-stick cooking spray.
  7. Place parchment paper over the cooking spray, ensuring it covers the pan completely.
  8. Pour the prepared batter evenly over the parchment paper in the pan.
  9. Bake for 12-13 minutes at 350 degrees Fahrenheit (175°C).
  10. Remove the cake from the oven.
  11. Immediately turn the hot cake over onto a clean towel that has been covered in powdered sugar.
  12. Roll the hot cake with the towel inside and place it on a baking sheet or set aside on the counter.
  13. Allow the rolled cake to cool completely.
  14. While the cake cools, prepare the frosting.
  15. Combine 2- 8 oz. packages of cream cheese, 2 sticks of room temperature butter, 2 cups of powdered sugar, and 2 tsp. vanilla in a bowl.
  16. Mix all frosting ingredients together with an electric mixer until smooth and creamy.
  17. Once the cake is completely cooled, carefully unroll the towel.
  18. Spread ⅓ of the prepared frosting evenly over the unrolled cake.
  19. Lightly sprinkle additional Christmas sprinkles over the frosting.
  20. Carefully re-roll the cake without the towel.
  21. Slice off about 1 inch from both ends of the cake to create an even, neat appearance.
  22. Frost the entire cake roll using a spatula or a large decorating tip to create swirls.
  23. Cover the frosted cake with more Christmas sprinkles, gently pressing them into the icing with your hands.

Notes

Ensure your butter and cream cheese are at room temperature for smooth frosting.
Roll the cake immediately after baking, while it’s still hot, to prevent cracking.
Dust your towel generously with powdered sugar to keep the cake from sticking.
Wait until the cake is completely cool before unrolling and frosting.
