  • 24 chocolate chip cookies (approximately 1.5 ounces each)
  • 1/2 to 1 quart vanilla ice cream, softened for 10-15 minutes
  • Sprinkles, chopped nuts, mini chocolate chips, or other toppings of choice

Instructions

  1. Make ice cream (if homemade) and bake the chocolate chip cookies according to your favorite recipe. Allow the ice cream to soften at room temperature for 10-15 minutes.
  2. Place one cookie upside-down on a work surface. Scoop 1-2 heaping tablespoons of softened ice cream onto the center of the cookie, adjusting the amount for your desired thickness.
  3. Gently press a second cookie right-side-up on top of the ice cream, applying even pressure until the ice cream spreads to the edges.
  4. Roll the ice cream edges in sprinkles, chopped nuts, mini chocolate chips, or other toppings for a fun finish.
  5. Serve immediately for a soft, melty treat or wrap individually in plastic wrap and freeze in an airtight container for later enjoyment.
