Chewy, delicious, and easy-to-make granola bars packed with peanut butter flavor and chocolate chips.

Ingredients

  • 1/2 cup creamy peanut butter (regular or reduced fat)
  • 1/3 cup honey
  • 1 large egg
  • 2 Tablespoons canola oil
  • 1 1/2 teaspoons vanilla extract
  • 3 1/2 cups old-fashioned oats
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon salt
  • 1/3 cup peanut butter chips
  • 1/3 cup mini chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. Line a 13×9-inch nonstick baking pan with cooking spray.
  3. In a large bowl, beat the peanut butter, honey, egg, oil, and vanilla extract.
  4. Beat until the mixture is smooth and creamy.
  5. In a separate medium bowl, stir together the oats, brown sugar, and salt.
  6. Add the oat mixture to the peanut butter mixture.
  7. Stir until all ingredients are well combined.
  8. Stir in the peanut butter chips and mini chocolate chips.
  9. Transfer the mixture to the prepared baking pan.
  10. Press the mixture firmly into an even layer.
  11. Bake for 12 to 15 minutes.
  12. Bake until the edges are golden brown.
  13. Remove the pan from the oven.
  14. Let the bars cool completely before slicing.
  15. Slice the granola into bars and serve.

Notes

Ensure bars are completely cool before slicing to prevent crumbling.
Press the mixture firmly into the pan for best results.
Use old-fashioned oats for the best chewy texture.
Store in an airtight container at room temperature for up to 5 days.
