  • 3 eggs (room temperature, about 70°F)
  • 1.5 cups all-purpose flour
  • 3/4 cup water
  • 1/4 cup whole milk
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 4 tablespoons butter (melted and cooled)
  • 1 teaspoon vanilla extract
  • 1.25 cups cherry pie filling
  • 1/2 teaspoon lemon zest

Instructions

  1. In a medium bowl, whisk the room temperature eggs until smooth.
  2. Add the all-purpose flour to the eggs and stir until just combined; small lumps are acceptable.
  3. Gradually add the water and whole milk, whisking continuously to create a smooth batter.
  4. Stir in the sugar, salt, vanilla extract, and lemon zest.
  5. Gently drizzle in the cooled melted butter while stirring until it is fully incorporated into the batter.
  6. Let the crepe batter rest for 10 to 15 minutes at room temperature.
  7. Heat an 8-inch nonstick skillet or crepe pan over medium-low heat for 2 minutes until it is evenly hot.
  8. Lightly spray or brush the pan with oil or butter.
  9. Pour about 1/4 cup of the crepe batter into the center of the hot pan.
  10. Immediately tilt and swirl the pan to spread the batter thinly and evenly over the surface.
  11. Cook the crepe for 1 to 2 minutes until the bottom is set and very lightly golden.
  12. Carefully flip the crepe over.
  13. Cook the second side for about 30 seconds until it is just set.
  14. Transfer the cooked crepe to a plate.
  15. Repeat with the remaining batter, lightly greasing the pan between each crepe.
  16. While the crepes are cooking, or just before serving, gently heat the cherry pie filling in a small saucepan over low heat.
  17. Alternatively, microwave the cherry pie filling for 1 to 2 minutes until warm, stirring occasionally.
  18. Place a cooked crepe on a serving plate.
  19. Spoon a generous portion of the warm cherry filling down the center or onto one half of the crepe.
  20. Fold the crepe in half or into quarters.
  21. Serve immediately while the crepes are still warm and the filling is hot.

Don’t skip the batter resting time; it makes crepes more tender.
Use a good nonstick pan for easy flipping.
