Deliciously spiced and naturally sweetened, these no-bake energy balls are a healthy snack that tastes just like pumpkin pie.

  • 1 tablespoon vanilla protein powder
  • 1 tablespoon pumpkin pie spice
  • 1 cup cashew butter
  • 1 tablespoon maple syrup
  • 2 tablespoons pumpkin puree

Instructions

  1. In a large bowl, combine the paleo flour, vanilla protein powder, and pumpkin pie spice.
  2. In a separate microwave-safe bowl, combine the cashew butter, maple syrup, and pumpkin puree.
  3. Microwave the cashew butter mixture for 30 seconds to 1 minute, until it is easy to mix.
  4. Pour the warm cashew butter mixture into the bowl with the dry ingredients.
  5. Stir well to combine all ingredients until a cohesive dough forms.
  6. Freeze the dough for about 10 minutes to allow it to harden slightly.
  7. Line a baking sheet with parchment paper.
  8. Roll the chilled dough into approximately 20 balls.
  9. Arrange the rolled balls on the prepared baking sheet.
  10. Refrigerate the energy balls until they are fully chilled and firm.
  11. Store the chilled energy balls in an airtight container in the refrigerator.

Notes

Chilling the dough in the freezer for 10 minutes makes rolling much easier.
Ensure you use pure pumpkin puree, not pumpkin pie filling.
Any creamy nut butter can be used, but cashew butter provides a neutral base for the pumpkin flavor.
For best flavor and texture, allow the energy balls to chill completely before serving.
