Ingredients

Scale
  • 1/2 cup (1 stick) butter
  • 3/4 cup white granulated sugar
  • 8 ounces pitted dates, finely chopped
  • 1 cup pecans, finely chopped
  • 1 tsp vanilla extract
  • 2 cups crisped rice cereal
  • Powdered sugar, for dusting or rolling

Instructions

  1. Finely chop the pitted dates and pecans. Use a food processor for best results.
  2. Avoid using pre-chopped dates with a coating, as they will not bind properly.
  3. Melt the butter in a saucepan over medium-low heat.
  4. Add the granulated sugar and finely chopped dates to the saucepan.
  5. Cook and stir the mixture until the sugar has fully dissolved.
  6. Remove the saucepan from the heat.
  7. Stir in the vanilla extract, finely chopped pecans, and crisped rice cereal.
  8. Use a non-stick spatula to thoroughly combine all ingredients.
  9. Let the mixture cool for several minutes until it's comfortable to handle.
  10. Use your hands to form the cooled mixture into 1-inch balls.
  11. Place the formed balls on parchment paper or a baking sheet.
  12. Lightly dust the balls with powdered sugar.
  13. Alternatively, roll the balls in a bowl of powdered sugar for a thicker coating.
  14. Store the finished Old-Fashioned Date Balls in an airtight container.

Notes

Ensure dates are finely chopped for a smooth texture.
Use a non-stick spatula for easy mixing and cleanup.
Allow the mixture to cool sufficiently before rolling.
If mixture is too sticky, chill it for 10-15 minutes.
