Chewy, crunchy, and packed with nutty pistachio flavor, these no-bake treats are elevated with a drizzle of rich dark chocolate.

  • 6 Tablespoons salted butter
  • 16 ounce bag mini marshmallows, divided
  • 3.5 ounce box instant pistachio pudding mix
  • 1 teaspoon pure vanilla extract
  • 6 cups rice krispies cereal
  • ½ cup dark chocolate melted

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add all but 1 cup of the mini marshmallows to the pot.
  3. Continue stirring until the marshmallows are completely smooth.
  4. Remove the pot from heat.
  5. Add the dry pistachio pudding mix to the marshmallow mixture.
  6. Add the pure vanilla extract to the mixture.
  7. Fold in with a spatula until well combined.
  8. Add the 6 cups of rice krispies cereal to the pot.
  9. Add the remaining 1 cup of mini marshmallows to the pot.
  10. Mix completely until all ingredients are well coated.
  11. Pour the mixture into a parchment paper lined 9-inch square baking dish.
  12. Allow the treats to cool and set at least one hour.
  13. Remove the treats from the dish.
  14. Remove the parchment paper.
  15. Cut the treats into 16 squares.
  16. Drizzle with the melted dark chocolate.
  17. Allow the chocolate to set, about 15 minutes.
  18. Enjoy!

Notes

Line your baking dish with parchment paper for easy removal and cleanup.
Stir marshmallows constantly over medium heat to prevent sticking and ensure a smooth mixture.
Work quickly once the cereal is added, as the mixture sets fast.
For best results, allow the treats to cool completely before cutting.
