  • ½ cup plain nonfat Greek yogurt
  • ¼ cup unsweetened vanilla almond milk or milk of choice
  • 2 tablespoons vanilla protein powder (1/2 scoop)
  • ½ cup old-fashioned rolled oats gluten free if needed
  • 2 teaspoons coconut sugar or substitute turbinado sugar, brown sugar, maple syrup, honey, or other sweetener of choice
  • ¼ teaspoon pure vanilla extract
  • ⅛ teaspoon pure almond extract optional
  • Small pinch kosher salt

Instructions

  1. Briskly whisk the Greek yogurt, almond milk, and protein powder together in a mixing bowl or large measuring cup.
  2. Add the oats to the mixture.
  3. Add the coconut sugar to the mixture.
  4. Add the vanilla extract to the mixture.
  5. Add the almond extract (if using) to the mixture.
  6. Add the salt to the mixture.
  7. Whisk all ingredients together until completely combined.
  8. Cover the mixture with plastic wrap or seal the lid of the jar.
  9. Refrigerate for 8 hours or up to 5 days.
  10. When ready to serve, stir once more.
  11. Transfer to a serving bowl.
  12. If the mixture is too thick, thin with a little extra almond milk.
  13. Sprinkle with any desired toppings.
  14. Enjoy immediately.

Notes

For best results, allow at least 8 hours for the oats to soak.
Adjust sweetness to your preference, especially if using sweetened protein powder.
Old-fashioned rolled oats provide the best texture; avoid instant oats.
