Adorable no-bake coconut truffles shaped like snowmen, perfect for holiday parties and sweet treats.

Ingredients

  • 320g (11.25 oz) dairy-free sweetened condensed milk (1 regular can)
  • 4 cups (320g) fine shredded coconut / desiccated coconut plus extra for rolling
  • 3 tablespoons vegan white chocolate or white candy melts, melted and as needed
  • 3 tablespoons black-colored icing or as needed
  • 2 tablespoons orange-colored icing or as needed
  • 24 thin pretzel sticks 2 inches (5 cm) each
  • 12 red candy straps 5 inches (13 cm) each

Instructions

  1. Add the shredded coconut and sweetened condensed milk to a large mixing bowl.
  2. Mix with a wooden spoon or hand mixer until the mixture is well combined.
  3. Divide the mixture into 12 larger balls for the snowman bodies.
  4. Divide the remaining mixture into 12 smaller balls for the snowman heads.
  5. Roll each larger and smaller coconut ball in extra shredded coconut to coat.
  6. Pair each larger ball with a smaller ball.
  7. Dab a small amount of melted white chocolate onto the top of each larger ball.
  8. Stick a smaller ball on top of each larger ball to form a snowman shape.
  9. Allow the coconut snowmen to firm up at room temperature or in the fridge.
  10. Using piping bags or toothpicks, draw black icing onto the snowmen to create eyes and buttons.
  11. Draw orange icing onto the snowmen to create noses.
  12. If desired, insert two pretzel sticks into each snowman to make arms.
  13. Wrap a red candy strap around each snowman's neck to create a scarf.
  14. Use a tiny dab of melted white chocolate if needed to secure the candy strap or pretzel sticks in place.
  15. Serve immediately or store as directed.

Notes

Use fine shredded coconut for the best texture.
Chill the mixture for 15-20 minutes before rolling if it’s too sticky.
Use toothpicks for detailed icing if you don’t have fine piping bags.
Store in an airtight container to keep them fresh.
