Indulge in these perfectly soft and chewy gingerbread cookies, topped with a sweet, delicate maple glaze.

  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1/3 cup molasses (I use Grandma's brand)
  • 2 1/4 cup + 1 tablespoon all-purpose flour (307 grams)
  • 2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 1 1/2 teaspoons ground ginger
  • granulated sugar for rolling
  • 1 tablespoon melted butter
  • 1 tablespoon pure maple syrup
  • 1 1/2 cups powdered sugar (180 grams)
  • 2 tablespoons milk
  • pinch of salt, to taste

Instructions

  1. Preheat your oven to 350 degrees F (175 C).
  2. In the bowl of a stand mixer, cream together the softened butter and 1 cup granulated sugar until light and fluffy.
  3. Add the large egg and molasses to the creamed mixture.
  4. Mix until all ingredients are well incorporated.
  5. Add the all-purpose flour, baking soda, 3/4 teaspoon salt, and ground ginger to the wet ingredients.
  6. Mix until a soft dough forms.
  7. Scoop the dough into balls, slightly larger than a golf ball, or your desired size.
  8. Roll each dough ball in granulated sugar to coat.
  9. Place the sugared dough balls on a baking sheet.
  10. Bake for 9-11 minutes.
  11. Let the cookies rest on the pan for a few minutes after baking.
  12. Transfer the cookies to a cooling rack to cool completely.
  13. While cookies cool, prepare the maple glaze.
  14. In a separate bowl, whisk together 1 tablespoon melted butter, pure maple syrup, powdered sugar, milk, and a pinch of salt until smooth.
  15. The glaze should be very thick; if it's too thick, add a tiny bit more milk, one teaspoon at a time, until it's dippable.
  16. Dip one side of each cooled cookie into the maple glaze.
  17. Run the edge of the cookie along the side of the bowl to remove excess drips.
  18. Set the glazed cookies on a piece of wax paper.
  19. Add a few festive sprinkles before the glaze sets, if desired.

Notes

Ensure butter is properly softened for a light, fluffy dough.
Measure flour by spooning it into the cup and leveling, rather than scooping directly.
Do not overbake these cookies to keep them soft and chewy.
Allow cookies to cool completely before glazing to prevent the glaze from melting.
