A wonderfully moist and tender coffee cake topped with a sweet, crunchy cinnamon streusel and an optional icing drizzle.

Ingredients

  • 1 egg
  • 1/4 cup oil vegetable or canola
  • 1 tsp. vanilla
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1/4 tsp. salt
  • 2 tsp. baking powder
  • 1 1/2 cups flour
  • 2 T butter melted
  • 1/2 cup brown sugar
  • 2 tsp. cinnamon
  • 2 T Flour
  • 1/2 cup walnuts chopped, optional
  • 1 T butter room temperature
  • 3/4 cup powdered sugar
  • 1 T milk extra, if needed

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×9 inch baking dish or line it with parchment paper.
  3. Beat the egg in a mixing bowl.
  4. Add the sugar, milk, salt, oil, and vanilla to the bowl.
  5. Mix these wet ingredients until they are well combined.
  6. Spoon the flour into a measuring cup and then dump it onto the wet batter in the bowl.
  7. Sprinkle the baking powder evenly over the flour.
  8. Gently mix just the top half of the flour into the baking powder.
  9. Stir the entire flour mixture into the batter until it is just combined.
  10. Pour the cake batter into the prepared 9×9 baking dish.
  11. In a microwave-safe bowl, melt 2 tablespoons of butter in the microwave.
  12. Remove the melted butter from the microwave.
  13. Add the brown sugar, cinnamon, and 2 tablespoons of flour to the melted butter.
  14. Stir the streusel ingredients until they are well combined.
  15. If desired, stir in the chopped walnuts.
  16. Sprinkle the streusel mixture evenly over the cake batter.
  17. Use a finger or the small end of a wooden spoon to poke the streusel halfway down into the cake batter.
  18. Poke the streusel randomly 12-18 times across the cake.
  19. Bake the cake for 25-30 minutes.
  20. Check for doneness by inserting a toothpick into the middle of the cake; it should come out with moist crumbs, not runny batter.
  21. Remove the cake from the oven when it is done.
  22. For the icing, combine 1 tablespoon of room temperature butter and 3/4 cup powdered sugar in a small bowl.
  23. Add 1 tablespoon of milk and mix until a smooth consistency is reached.
  24. Add extra milk, a tiny bit at a time, if a thinner consistency is desired.
  25. Lightly drizzle the icing over the cooled coffee cake, if using.

Notes

Do not overmix the cake batter; mix just until the flour is incorporated for a tender cake.
Ensure your baking powder is fresh for proper leavening.
Check the cake for doneness around the 25-minute mark to prevent overbaking.
Let the cake cool slightly before drizzling with icing for the best presentation.
