These incredibly soft and moist pumpkin muffins are topped with a sweet cinnamon-sugar crunch, making them perfect for breakfast or a cozy snack.

  • 1 1/2 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice
  • 1 15 oz can of pure pumpkin, or homemade puree
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 1/4 cups plus 1 Tbsp sugar, divided
  • 1 tsp cinnamon

Instructions

  1. Place an oven rack in the middle position.
  2. Preheat your oven to 350°F (175°C).
  3. Put paper liners into 18 cups of two 12-cup muffin pans.
  4. In a small bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice.
  5. Set this dry mixture aside.
  6. In the bowl of an electric stand mixer fitted with the paddle attachment, combine the pumpkin puree, vegetable oil, eggs, and 1 1/4 cups of sugar.
  7. Mix these wet ingredients together on the lowest speed until just combined.
  8. Gradually add the reserved flour mixture to the wet ingredients.
  9. Continue to mix on the lowest speed until the batter is just combined and no streaks of flour remain.
  10. In a separate small bowl, stir together the 1 tsp of cinnamon and the remaining 1 Tbsp of sugar.
  11. Divide the muffin batter evenly among the 18 prepared muffin cups, filling each about 2/3 of the way full.
  12. Sprinkle the cinnamon-sugar mixture evenly over the tops of each muffin.
  13. Bake for 20-25 minutes.
  14. The muffins are done when they are puffed and golden brown.
  15. Insert a toothpick into the center of a muffin; it should come out clean.
  16. Cool the muffins in the pan on a wire rack for 5 minutes.
  17. After 5 minutes, transfer the muffins directly to a wire rack.
  18. Allow the muffins to cool completely before storing.

Notes

Do not overmix the batter; mix until just combined for tender muffins.
Ensure you are using pure pumpkin puree, not pumpkin pie filling.
For easy removal and cleanup, always use muffin liners.
Cool muffins completely on a wire rack to prevent sogginess.
