A light, fluffy, and decadent vegan frosting with a rich caramel-like flavor from brown sugar, perfect for cakes and cupcakes.

  • 160 g (9 tablespoons) aquafaba
  • 260 g (1 cup + 4 teaspoons) light brown sugar
  • 250 g (8.8 oz) vegan butter room temperature
  • 2 tablespoons ground cinnamon optional
  • 1 teaspoon vanilla extract

Instructions

  1. Ensure your stand mixer bowl or mixing bowl is completely clean and dry.
  2. Wipe the bowl with a little vinegar or lemon juice to remove any residue.
  3. Add the aquafaba and light brown sugar to the clean bowl.
  4. Place the bowl on top of a saucepan with a few inches of water in the bottom (water bath).
  5. Set the saucepan on medium heat.
  6. Heat for a few minutes until the sugar is completely dissolved.
  7. Remove the bowl from the heat.
  8. Use an electric whisk or transfer the syrup into your stand mixer.
  9. Beat the mixture on high speed for 15-20 minutes.
  10. Continue beating until the mixture is completely cooled.
  11. Continue beating until the mixture is glossy and stiff.
  12. The mixture should hold firm peaks and stay in the bowl when carefully turned upside down.
  13. Slowly add chunks of room temperature vegan butter, one at a time.
  14. Leave about 5 seconds between each butter addition.
  15. Continue to whisk on medium speed for 5-10 minutes after all butter is incorporated.
  16. Whisk until the mixture is fluffy and lightened in color.
  17. Scrape down the sides of the bowl with a spatula.
  18. Add the vanilla extract.
  19. Add the ground cinnamon (if using).
  20. Whisk for a couple of minutes until all ingredients are well combined.

Notes

Ensure your mixing bowl and whisk attachments are spotlessly clean and grease-free for the aquafaba to whip properly.
Use room temperature vegan butter; cold butter will make the frosting lumpy.
Don’t be alarmed if the frosting looks curdled after adding the butter; keep whisking, and it will come together.
For best results, use a stand mixer to ensure thorough whipping and aeration.
