Cinnamon roll French toast roll-ups are the breakfast mashup you didn’t know you needed until now. These are 100% vegan, golden brown, and filled with a gooey cinnamon butter that melts in your mouth.
6 pieces sandwich bread (white or brioche style)
2 tbsp vegan buttery spread (for the pan)
6 tbsp vegan buttery spread (softened, for filling)
3 tbsp brown sugar
1.5 tbsp cinnamon, ground
6 tbsp JUST Egg (plant-based egg substitute)
2 tbsp almond milk
0.5 tsp cinnamon, ground (for batter)
0.5 tsp vanilla extract
2 tbsp powdered sugar
1 tsp almond milk (for icing)
1. Roll bread flat with a rolling pin. Carefully cut off crusts.
2. Combine filling ingredients (butter, brown sugar, 1.5 tbsp cinnamon). Stir until smooth. Spread about a tablespoon of filling on each piece of bread.
3. Tightly roll up each piece of bread.
4. In a shallow wide bowl, whisk together batter ingredients (JUST Egg, milk, 0.5 tsp cinnamon, vanilla).
5. Add vegan buttery spread to a large skillet over medium heat.
6. Dip each roll-up into the batter for about 10 seconds, coating all sides. Place into the pan.
7. Cook for 2-3 minutes on each side until golden brown and evenly toasted.
8. Whisk together powdered sugar and almond milk to make icing.
9. Serve warm with the icing drizzle and your favorite toppings.
For best results, use a bread that flattens easily without tearing.
Don’t over-soak the bread or it will become too soft to handle.
