Festive no-bake cookies made with cornflakes and marshmallows, shaped into wreaths and decorated with red-hot candies.

  • 1/2 cup unsalted butter
  • 30 large marshmallows (about 3 cups)
  • 1 Tablespoon green food coloring
  • 1 teaspoon vanilla extract
  • 4 cups cornflakes
  • Cinnamon red-hot candies
  • Cooking Spray

Instructions

  1. Melt the butter in a large saucepan over low heat.
  2. Add the marshmallows to the melted butter.
  3. Stir constantly with a wooden spoon until the marshmallow mixture is smooth.
  4. Add the green food coloring and the vanilla extract.
  5. Stir to combine the food coloring and vanilla into the marshmallow mixture.
  6. Add the cornflakes to the saucepan.
  7. Stir the mixture constantly until the cornflakes are evenly coated.
  8. Place a large piece of parchment paper on the counter.
  9. Spray the parchment paper lightly with cooking spray.
  10. Remove the saucepan from the stove.
  11. Quickly scoop mounds of the cornflake mixture onto the prepared parchment paper.
  12. Form the cornflake mixture into wreaths by making a small hole in the center of each mound.
  13. While the cornflakes are still warm, place the red-hot candies atop the wreaths for garnish.
  14. Allow the cookies to cool completely before serving.

Notes

Work quickly once you add the cornflakes, as the mixture sets fast.
Lightly spray your hands with cooking spray if you find the mixture too sticky to shape.
Use a good quality green food coloring for a vibrant Christmas color.
Ensure the marshmallows are fully melted and smooth for the best texture.
