Soft, chewy, and naturally sweetened, these Healthy Apple Pie Oatmeal Cookies taste just like a slice of pie in a wholesome cookie form.

Ingredients

  • 1 cup (100g) instant oats (gluten-free if necessary)
  • ¾ cup (90g) whole wheat flour or gluten-free* flour
  • 1 ½ tsp baking powder
  • 1 ½ tsp ground cinnamon
  • ⅛ tsp salt
  • 2 tbsp (28g) coconut oil or unsalted butter, melted
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • ½ cup (120mL) agave
  • 1 cup (125g) finely diced red apple (about 1 medium)

Instructions

  1. Whisk together the oats, flour, baking powder, cinnamon, and salt in a medium bowl.
  2. In a separate bowl, whisk together the melted coconut oil or butter, egg, and vanilla.
  3. Stir in the agave into the wet ingredients.
  4. Add the flour mixture to the wet ingredients.
  5. Stir just until the flour mixture is incorporated.
  6. Fold in the finely diced apple.
  7. Chill the dough for 30 minutes.
  8. Preheat the oven to 325°F (160°C).
  9. Line a baking sheet with parchment paper or a silicone baking mat.
  10. Drop the cookie dough into 15 rounded scoops onto the prepared sheet using a spoon and spatula.
  11. Flatten each cookie slightly.
  12. Bake at 325°F (160°C) for 11-14 minutes.
  13. Cool on the pan for 10 minutes.
  14. Turn out the cookies onto a wire rack to cool completely.

Notes

Use instant oats for the best texture; old-fashioned oats will yield a different result.
Chilling the dough for 30 minutes is crucial to prevent the cookies from spreading too much.
Measure flour and oats by weight (grams) for the most accurate and consistent results.
Don’t overbake the cookies; they are best when slightly soft in the center.
