Soft, chewy, and naturally sweet energy balls made with dates, almonds, and coconut. A healthy, vegan, and gluten-free snack perfect for busy days or post-workout fuel.

Ingredients

1 cup almonds (roughly chopped or whole)
10 pitted Medjool dates (large and soft)
1/4 cup shredded coconut flakes
1 teaspoon vanilla extract
A pinch of salt

Instructions

Add the almonds into a food processor and pulse a few times to coarsely chop them.
Add the Medjool dates, shredded coconut, vanilla extract, and a pinch of salt.
Blend until the mixture comes together into a cohesive, sticky dough. Stop and scrape down the sides as needed.
Using your hands or a small cookie scoop, roll the mixture into 1-inch balls.
Place the energy balls on a parchment-lined tray and refrigerate for at least 30 minutes before serving.
Store in an airtight container in the refrigerator for up to 5 days.

Notes

Customize by adding a tablespoon of cocoa powder, cinnamon, or chocolate chips.
For a coarser texture, chop the almonds roughly or keep them whole.
If the mixture is too dry, add 1-2 teaspoons of water or date syrup.
If the mixture is too wet, add a tablespoon of shredded coconut or rolled oats.
