Quick and easy no-bake pumpkin protein balls, perfect for a healthy snack or breakfast on the go.

Ingredients

  • 1 cup rolled oats
  • 2 scoops vanilla protein powder
  • 1 teaspoon pumpkin pie spice
  • ½ cup almond butter
  • ⅓ cup pumpkin puree
  • ¼ cup raw honey

Instructions

  1. Place all ingredients into a large mixing bowl.
  2. Combine 1 cup rolled oats, 2 scoops vanilla protein powder, 1 teaspoon pumpkin pie spice, ½ cup almond butter, ⅓ cup pumpkin puree, and ¼ cup raw honey in the bowl.
  3. Mix all ingredients together until a uniform, thick dough forms.
  4. Using a small cookie scoop, scoop out approximately 24 small portions of the mixture.
  5. Roll each portion between your palms to form a smooth ball.
  6. Place the rolled balls onto a plate.
  7. Freeze the pumpkin protein balls for 10 minutes to help them firm up.

Notes

Ensure almond butter is runny for easy mixing.
Use 100% pure pumpkin puree, not pie filling.
For vegan, substitute raw honey with maple syrup.
Adjust consistency with a splash more pumpkin puree if dry, or a sprinkle of oats/protein powder if too wet.
